    We are currently looking for a Junior Sous Chef, to work along with the Head Chef to maintain standards set by the Company Operating Standards, ensuring the Kitchen hygiene standards are without exception adhered to. To ensure that guests receive at all times through effective communication, with all departments the highest level of guest care. Ensure all cost are kept in line with the Kitchen budgets agreed by the company. £15 Per Hour

    Duties and Responsibilities

    • To assist the Head Chef/Sous Chef in the planning, organising and control of day-to-day operation of the department thereby ensuring the established standards of performance are maintained and total guest satisfaction is achieved.
    • To assist the Head Chef in ensuring HACCP is in place to ensure due diligence in preventing an outbreak of food along with supervising the work of the team, allocating special duties and responsibilities.
    • To assist the Head Chef/Sous Chef to supervise all food preparation and production in all Kitchens.
    • To monitor the temperature, quality and portion size of all food served from the Kitchen areas.

    • 5. To assist the Head Chef/Sous Chef to set standards in conjunction with the Team and maintain these standards through training and promotion of training in all areas.

      6. Ensure good communication throughout Kitchen department at all times.
    • To ensure the effective control of refrigeration and dry store goods to ensure that there is no waste.
    • To ensure that all food leaving the Kitchen is prepared and served to the pre-agreed consistent high standards, ensuring that all hot food leaving the Kitchen is at the required temperature.
    • To ensure that all areas of responsibility are kept sanitised and free from dust and debris at all times, following, strict and pre-agreed cleaning schedules.
    • Attend meetings as requested by Management
    • To assist the Head Chef/Sous Chef to oversee the compilation of all colleague rotas according to occupancy levels.
    • To assist the Head Chef/Sous Chef to ensure good induction to the Department for all colleagues, as outlined in departmental induction check list.
    • To assist the Head Chef/Sous Chef to oversee the training of new colleagues as well as ongoing training for existing colleagues.
    • To assist the Head Chef/Sous Chef to set measurable objectives for sub-ordinates and monitor through regular appraisals.
    • To achieve Departmental standards as defined in your Standards Manual and to follow the procedures laid down.
    • To take an active role as a team member, welcoming new colleagues, assisting with their training and participating fully in all ongoing training initiatives.
    • To assist the Head Chef/Sous Chef to communicate relevant matters to the team and ensure that they are familiar with Eastwood Hall product knowledge and future plans.

    Job Purpose

    To work along with the Kitchen Management Team to maintain standards set by the Company Operating Standards, ensuring the Kitchen hygiene standards are without exception adhered to. To ensure that guests receive at all times through effective communication, with all departments the highest level of customer care. Ensure all cost are kept in line with the Kitchen budgets agreed by the company.

    Key responsibilities

    To ensure that work is carried out in a clean and tidy fashion and the fridge’s and work tops and general areas of the kitchen meet the requirements of Environment Health and Safety standards.

    • To be aware of the mise en place needed to facilitate the numbers required for starter and desert section
    • To ensure that all aspects of the breakfast and lunch buffets are covered as per the SOP manual.
    • To store food in line with the food hygiene legislation
    • To be aware of all food components required to make up each dish to company standard.
    • To confidently run the section on a day by day basis with particular attention paid to the minimum food temperatures required.
    • To ensure probe is used in clean and calibrated as required
    • To work closely with the Head Chef in all aspects of the job, including training to the standard required.
    • To prepare, cook and serve dishes with hygiene regulations and company standard
    • To assist where necessary, other sections if needed to the standards set by the Head Chef.
    • To maintain equipment is used and report any defects as soon as possible
    • To attend any departmental and training meetings as required.
    • To be dressed in a smart and professional manner in conjunction with the Standards stated in your handbook.
    • To ensure COSHH Regulations are adhered to.

    We are looking for a Breakfast Cook with previous experience and a can do attitude and experience within a similar position in a hotel kitchen and can work in a busy environment. A chef with a minimum of level 2 food safety hygiene and able to work to deadlines whilst providing high quality breakfast dishes.

    Shift Pattern 5:30am to 2pm, 5 days over 7

    Role Purpose

    • You will be working with a wide range of breakfast products and serving fresh and tasty dishes to our guests.

    As a Chef De Partie, you will be working in a passionate and hard-working team to create an outstanding culinary experience for our customers in the market-leading food service company in the UK.As our Chef De Partie you must be quick-thinking, adaptable and calm under pressure.     Job Description:

    As an experienced chef, you will be responsible for ensuring all food service are kept in line with the kitchen standards of procedures and supporting the Sous and Head Chef in maintaining excellent food safety and hygiene as well as leading the team during service when required.

    • Supporting the Head Chef in each service
    • Managing and ordering for your own section
    • You will already be working as a Chef in a busy, hotel, pub or restaurant kitchen
    • Experience of multi-outlet hotel kitchen
    • Used to serving meals for different events and functions as well as restaurant service.
    • Ensure that a high standard of cleanliness is maintained in the kitchen operation.
    • Anticipate customer needs wherever possible, and to react to these to enhance customer satisfaction
    • Be correctly dressed and understand the importance of high personal hygiene standards
    • Participate in the monthly stock, take at your Line Manager’s request, and to action any discrepancies immediately
    • purchasing, price and portion control, and wastage
    • Abide by all company and legislative food standards
    • Ensure that you are aware of, and uphold, all appropriate Risk Assessments
