The Role
As a Commis Sushi Chef, you will work under the guidance of senior sushi chefs to prepare high-quality sushi and sashimi, maintain excellent kitchen hygiene, and support the smooth operation of service. This role is ideal for someone looking to specialise in Japanese cuisine, learn traditional and modern sushi techniques, and build a successful career in an ambitious and dynamic restaurant environment.
Key Responsibilities:
Assist in the preparation of sushi rice, sashimi, nigiri, maki rolls, and other Japanese dishes, ensuring consistency and high standards.
Support senior sushi chefs with daily mise en place and fish preparation.
Maintain a clean, organised, and efficient workstation, following all food hygiene and safety regulations.
Learn and apply proper knife skills and traditional Japanese preparation techniques.
Monitor stock levels, especially fresh fish and sushi ingredients, ensuring minimal waste.
Follow HACCP and food safety standards at all times.
Demonstrate a positive attitude, teamwork, and willingness to learn in a high-pressure service environment.
Requirements & Skills:
Previous kitchen experience preferred; experience in sushi or Japanese cuisine is advantageous but not essential.
A strong passion for Japanese cuisine and sushi preparation.
Keen interest in learning fish preparation and knife skills.
Strong attention to detail and commitment to quality.
Ability to work effectively in a fast-paced kitchen environment.
A team player with excellent communication skills.
Basic understanding of food safety and hygiene (training will be provided).
